Framboise Boon

Tap to rate

Fresh raspberries, as if picked straight from the bush: refreshing, mild, full-bodied and very fruity, the taste of real berries rather than raspberry sweets. Highly drinkable at 5 % ABV. Each litre carries 300 grams of fresh raspberries plus 50 grams of cherries for extra mildness. The berries ferment alongside young lambic, with old lambic matured in oak in the blend. No sweeteners are added. Frank Boon was the first to bring the raspberry style back, in the summer of 1976.

Tasting Notes

AI-generated sensory profile for Framboise Boon

◎ Appearance

Deep ruby red with amber highlights, translucent and bright. A modest off-white head forms quickly and fades to a thin collar, leaving delicate lacing on the glass. The carbonation is lively but gentle, appropriate for a 5% fruit lambic.

◌ Aroma

The nose is dominated by fresh red raspberry and subtle cherry, with neither sweetness nor artificial character. Beneath the fruit lies a soft oak presence and a faint funkiness from the aged lambic blend, lending complexity without harshness. The overall impression is clean and natural, like berries crushed gently in the hand.

◐ Taste

Bright fruit drives the palate: ripe raspberry and cherry arrive immediately, with a refreshing tartness that builds gradually rather than dominates. The full body and smooth texture—courtesy of the young and aged lambic blend—carry the fruit cleanly across the mid-palate. A gentle acidity and light hop bitterness (10 IBU) provide structure, while a whisper of oak adds depth without heaviness.

◑ Finish

The finish is dry and lingering, with berry character fading into a subtle oak and funky-fermented aftertaste. No cloying residue remains—only the memory of fresh fruit and a gentle drying sensation on the palate.
