Budike Weisse

Tap to rate

Like a mysterious white wine in the glass, with fine bubbles. The nose recalls French cider and apple must, the first taste grated Boskoop apples – sweet at first, then gently sour. The second sip adds orange and citrus, melon, cucumber, dill and mustard seeds. Once poured all over Berlin, the old recipe was revived: no syrup, no hops, lactic cultures. 3.5% ABV.

Tasting Notes

AI-generated sensory profile for Budike Weisse

◎ Appearance

A pale, luminous straw colour fills the glass, with a hazy, cloud-like suspension that catches the light like white wine. Fine, persistent bubbles rise steadily through the body, creating a delicate mousse that clings to the rim with gentle, lacy retention. The carbonation is refined and abundant without aggression.

◌ Aroma

The nose is immediately inviting, opening with orchard notes—ripe Boskoop apple and cider-like apple must—followed by a subtle stone-fruit whisper. Beyond the fruit lies a gentle green character: dill, fresh cucumber skin, and a faint mustard-seed spice that suggests the lactic fermentation at work. A thread of wild yeast complexity underlies the composition without dominating.

◐ Taste

The entry is deceptively sweet, with grated apple and a soft, fruity roundness on the tongue, but acidity builds quickly and elegantly across the palate. Mid-palate reveals citrus zest, melon flesh, and those distinctive spice notes—dill and mustard seed—balanced by a crisp, mineral undertone. The finish is clean and slightly tart, with no lingering sweetness, allowing the beer's refreshing, wine-like quality to dominate.

◑ Finish

The aftertaste is short and bright, trailing off into a gentle tartness and a lingering apple-skin dryness. No heavy sweetness remains; instead, a refreshing, almost herbal crispness persists on the palate.
