◎ Appearance

Pale straw-yellow with a faint haze from natural cloudiness through yeast. Fine, persistent carbonation builds a delicate white head with tight lacing that clings to the glass as the beer is consumed. The light transmits cleanly through the body, revealing the characteristic brightness of the style.

◌ Aroma

Intensely tart citrus and green apple notes lead, underpinned by subtle wheat grain and a mineral dryness. A restrained yeast character adds soft herbal complexity without dominating, while the absence of bittering hops allows the lactic fermentation to breathe clearly. The overall impression is crisp and refreshing, almost champagne-like in its layered acidity.

◐ Taste

The palate opens with immediate, mouth-puckering sourness balanced by a clean wheat malt sweetness that prevents the beer from becoming one-dimensional. Mid-palate reveals fruity esters—green apple and subtle stone fruit—layered beneath the dominant lactic tartness. The finish is bone-dry, crisp, and mineral-forward, with residual acidity that cleanses rather than lingers aggressively.

Short to medium length with a clean, mineral-edged fade. The aftertaste is dry and refreshing, returning to the tart acidity without any astringency or unwanted phenolic notes.
