Erastus presents a bright golden hue with excellent clarity and fine carbonation. The head forms dense and persistent, leaving structured lacing down the glass that speaks to the beer's malt backbone and yeast character.

◌ Aroma

The nose opens with characteristic Trappist yeast esters—warm pear and delicate orange-blossom notes dominate the mid-range. A subtle peppery phenolic note and light herbal undertones emerge beneath, with a whisper of coriander seed and honey adding complexity to the bouquet.

◐ Geschmack

The palate is dry and elegant, with fruity and yeasty notes taking the lead across entry and mid-palate. Spice and floral character build gradually, while a bready, honey-touched sweetness provides counterpoint without obscuring the beer's essential dryness. The 30 IBUs contribute restraint rather than aggression, allowing the phenolic warmth to take center stage.

The finish is long and warming, with alcoholic heat becoming apparent only on reflection—a reminder of the beer's deceptive strength at 9%. Peppery notes linger pleasantly into the aftertaste, with a subtle herbal dryness that invites the next sip.
