Raspberry & Lime Sour

Ireland·Fruited Sour

◎ Aussehen

A vibrant red hue dominates the glass, achieved through the interplay of fruit and minimal grain bill. The body is clear and bright, with lively carbonation that rises steadily. A fine, delicate head forms and recedes quickly, leaving only sparse, intermittent lacing on the glass walls.

◌ Aroma

The nose leads with tart red raspberry, immediately followed by a sharp lime zest that cuts through the fruit. Underlying the citrus and stone fruit, a faint tartness from the souring yeast emerges, adding complexity without overwhelming the fresh fruit character. The overall impression is bracing and summery, with no apparent maltiness or hop bitterness in the aroma.

◐ Geschmack

The palate opens with crisp acidity and a mouth-watering sharpness from the specialized souring yeast, which defines the beer's structural foundation. Ripe raspberry sweetness arrives in the mid-palate, providing a counterpoint to the acidity and lending body without cloyingness. Lime citrus cuts through on the back end, maintaining a dry, refreshing profile while the low IBU ensures no astringent bitterness dominates the finish.

◑ Abgang

The finish remains crisp and quick, with the acidic bite lingering gently on the palate rather than the fruit character. A clean, mouth-watering sensation persists without sticky residue, encouraging further sips.
