Strong Suffolk Dark Ale

◎ Aussehen

Deep mahogany to dark brown, with substantial opacity throughout. The head forms thick and tan, settling to a persistent collar with fine Schaumhaftung that clings to the glass walls. Carbonation is moderate, releasing slow, deliberate bubbles characteristic of a matured ale.

◌ Aroma

Complex and layered, with prominent dried stone fruit and plum notes that emerge from the long oak maturation. Woody undertones—vanilla and subtle tannic oak—frame a gentle base of toffee and dark Malz sweetness. A light sherry-like warmth develops as the beer opens, without sharp alcohol burn.

◐ Geschmack

The palate enters smooth and full-bodied, with ripe dark fruit flavours meeting soft oak tannins in the mid-palate. Caramel and toasted Malz provide structure, while moderate bitterness (35 IBU) sits restrained, allowing fruit and wood to dominate. The finish is dry and warming, with lingering oak spice and a faint wine-like elegance.

◑ Abgang

Long and warming, with oak and dried fruit notes fading gradually into a gentle dryness. A subtle vinous quality persists, reflecting the beer's extended maturation in 100-barrel vats.
