Schlenkerla is one of Germany's most celebrated breweries, with records of beer brewing and a tavern on the site in Bamberg dating to 1405, when the property was known as the House of the Blue Lion. The brewery is the home of Aecht Schlenkerla Rauchbier, a traditional smoked beer made with malt dried over an open beechwood fire — a technique kept alive today only by Schlenkerla and its Bamberg neighbour Spezial. The name Schlenkerla derives from a nickname given to owner Andreas Graser after 1875, whose unusual gait in the Franconian dialect was described as schlenkern (to flail the arms). Today the brewery and its famous tavern are run by the Trum family in the sixth generation, situated in the UNESCO World Heritage-listed city centre of Bamberg.
