Founded in 2010 by Mickaël Novo, who began experimenting with recipes in his kitchen before opening his micro-brewery in Neydens — at the foot of Mont Salève, a stone's throw from Switzerland and Lake Geneva. All beers are unfiltered, unpasteurized, and contain no additives. Uses French Barberouge, NZ Nelson Sauvin, Cascade, and Chinook hops. Known for experimentation: IPAs, stouts, grape beers fermented with wine yeasts, spontaneous fermentation, and barrel-aged releases. Widely regarded as one of France's top craft breweries.
