Founded in 2016 by Bill Wesselink and Hagen Dost, two Americans who met while studying at the Doemens Academy in Munich. Dovetail is one of the few American craft breweries built from the ground up around European lager traditions rather than ales. Located in Chicago's Ravenswood neighborhood on what locals call Malt Row, the brewery keeps a deliberately narrow focus on styles like Helles, Hefeweizen, Kölsch, Rauchbier, Grodziskie, and Maibock. The approach draws direct inspiration from the small family breweries of Germany, Belgium, and the Czech Republic.
