Simcoe Porter

◎ Appearance

Deep brown with a distinct reddish undertone, presenting a dense and well-formed head that clings to the glass with good retention. The beer is opaque, characteristic of the Porter style, with a rich, inviting colour that reflects careful roasting of the base malts.

◌ Aroma

Roasted malt character dominates the nose, accompanied by distinct notes of raisins and prunes that speak to the darker malt bill. A subtle malt loaf note rounds out the profile, while dry-hopping with Simcoe introduces a secondary aromatic layer of citrus and herbal complexity that complements the fruit-forward character.

◐ Taste

The palate opens with balanced malt sweetness and dried fruit character, moving into pronounced coffee notes in the mid-palate. The mouthfeel remains smooth and refined despite the 6.5% ABV, while Simcoe's contribution adds a subtle hoppy-citrus thread. The finish transitions cleanly to a dry, measured bitterness that leaves a coffee-and-cocoa aftertaste.

◑ Finish

The finish is dry and moderately long, with lingering coffee and roasted grain notes that fade gracefully. A mild bitterness persists without harshness, characteristic of the restrained 35 IBU count.

Serve at 10–13°C. Too cold mutes the roasted complexity that makes a good porter worth drinking slowly.
