Dread & Breakfast

Tap to rate

Dread & Breakfast is a two-year cuvée of bourbon barrel-aged ale with freshly roasted Dark Matter coffee, matured in extended-age and double-barreled casks that split evenly between French and American oak. Cocoa, vanilla, maple and subtle smoke come through in a blend the brewery plays as the most important beer of the day. Limited release from Revolution in Chicago, on draft and in cans.

◐ Taste

The palate enters with rich, roasted coffee character and semi-sweet chocolate, followed by creamy vanilla and a gentle oak structure that does not dominate. The mid-palate is full and smooth, with maple undertones and a restrained smoky dryness that balances the residual sweetness. Bitterness sits at a moderate 65 IBU, present but not harsh, providing definition without aggression.

◑ Finish

The finish is long and warming, with coffee and cocoa persisting on the palate for several minutes. A soft bourbon heat builds gradually, with lingering oak tannin and a dry, slightly smoky aftertaste that prevents cloying sweetness.
