Tap to rate

Like the whole family it is brewed low and slow in Chicago, kept cold in the tanks to mellow and never pasteurized.

◌ Aroma

The nose leads with clean, grainy malt character—bread crust and soft cereal notes—alongside a gentle floral and herbal hop presence. There is no yeast funk or fruitiness; the brewed-low-and-slow maturation has yielded a composure that allows the noble hop structure and refined malt depth to speak clearly.

◐ Taste

The palate enters full-bodied and smooth, with pronounced malt sweetness balanced by a firm, measured hop bitterness that persists through the mid-palate. The flavor is neither harsh nor thin; instead it delivers rich malt character—biscuit and bread notes—while maintaining enough crisp hop definition to prevent any cloying sensation.

The finish is clean and moderately long, with the bitterness fading to a soft, dry malt aftertaste. A subtle refreshing quality emerges as the beer warms slightly, inviting the next sip.
