The wort is boiled for more than 24 hours, which builds deep, complex flavours; towards the end of fermentation freshly roasted Guatemalan beans go straight into the beer and add a rich, powerful coffee note. Nine further months in bourbon casks from an Irish distillery round it off. The result is punchy and well rounded, with chocolate behind the beans.
