BockThor

Tap to rate

Dark, malty and roasted-caramel at the core, with a special malt bitterness and notes of chocolate, hazelnut and coffee. This doppelbock is decocted the traditional way and brewed with fresh Waalwijk hops that went in about 22 hours after harvest. The name plays on the Dutch word for the longhorn beetle, a pest nobody wants in a barrel room. 9.5 % ABV.

◌ Aroma

The nose opens with pronounced roasted malt and caramel sweetness, layered beneath toasted grain and subtle chocolate notes. Fresh Waalwijk hops—harvested mere hours before brewing—contribute a restrained herbal quality that complements rather than overshadows the malt-forward composition. Hazelnut and coffee undertones emerge as the beer warms, adding complexity without aggression.

◐ Taste

Entry is decidedly malty with pronounced caramel and roasted grain character, immediately establishing the beer's weight and traditional decoction brewing heritage. The mid-palate expands with chocolate, coffee, and nutty notes that integrate seamlessly with a controlled bitter finish arising from noble hop selection and skillful malt manipulation. At 9.5% ABV, the alcohol warmth is present but never harsh, supporting rather than dominating the flavor architecture.
