Modus Pale is the brewery's longest-running pale ale, first released as Simmy Minion – a nod to the Simcoe hop at its centre. The grist combines Pilsner, Munich, wheat and Gladiator malts, while Cascade, Simcoe, Columbus and Citra go in with a generous dry hop. It pours golden and finishes dry and crisp. Pine resin and grapefruit lead the aroma, followed by orange peel, a light bready malt base and a firm, clean bitterness.
