Pale 31 is the brewery's California pale ale, named for the state's admission as the 31st to the Union and a descendant of the Windsor Pale first brewed in 1997. It left regular production in 2018 and now returns in limited runs for Brewmaster's Collective members. Pale, Munich and Carapils malts give a clear gold colour and lightly toasted, honeyed grain; the hops add floral notes, grapefruit and orange peel and a trace of pine, and the finish is light and softly bitter.
