Big Casino

Tap to rate

Big Casino is the flagship IPA of the Wool House brewpub and has been brewed since 2012. The brewery's own yeast strain and a blend of the brewers' favourite hops make it a very fruity, juicy and heavily hopped beer at 5.7 %. The name goes back to Pat Garrett and Billy the Kid, who played a card game of that name together; Garrett took the trump hand 'Big Casino' as his nickname, the Kid 'Little Casino'. Like every Dancing Man beer it is unfined.

◎ Appearance

Big Casino presents a bright golden hue with excellent clarity and a dense, creamy white head that clings persistently to the glass. The carbonation is lively and fine, creating steady streams of tiny bubbles that maintain good Schaumhaftung throughout the drinking experience. The unfiltered character is visible in a soft, barely perceptible haze that adds to its approachable character.

◌ Aroma

The nose leads with juicy citrus and tropical stone fruit notes driven by the brewery's proprietary yeast strain and carefully selected hop blend. Beneath the fruit-forward character lie soft, supporting malt undertones that provide gentle sweetness without overwhelming the palate. A subtle herbal spice rounds out the aromatic profile, typical of well-integrated noble hops.

◐ Taste

The palate entry is crisp and immediately fruity, with the full hop character asserting itself at moderate intensity. Mid-palate development shows a balance between the juicy, almost juice-like hop flavours and a restrained malt backbone that provides structure without heaviness. The 60 IBU bitterness arrives cleanly at mid-palate and persists through the finish, grounded and resolute rather than aggressive.

◑ Finish

The finish is dry and relatively quick to fade, with lingering hop bitterness and a faint fruit memory that dissipates smoothly. At 5.7% ABV, the beer shows no alcohol warmth, allowing the hop character to close the experience cleanly.

Serve at 8–11°C

Serve well-chilled. Session IPAs are at their best cold — the lower ABV means less warmth to balance the hops.

Tulip glass

The curved shape concentrates hop aromas and supports a thick head. Essential for aromatic ales and IPAs where the nose is half the experience.

Drink fresh. Session IPAs are brewed to be consumed young — the hops are at their best now.
