Unfiltered Hells

Tap to rate

Hells with the yeast left in. Skipping filtration leaves the lager hazy and gives it a noticeably fuller body than the filtered original, at the same 4.6%. The recipe uses Perle and Hallertauer Tradition hops, Pilsner and wheat malt and a Bavarian lager yeast. At the brewery's beer hall in Kentish Town it is poured straight from the tank; beyond that it has returned as a 440 ml can in Arch 55, the series of small batches brewed under the original railway arches.

◌ Aroma

Clean, grassy notes from Perle and Hallertauer Tradition hops dominate the nose, with a gentle herbal quality and subtle floral undertones. Soft Pilsner and wheat malt contribute a light breadiness and gentle sweetness in the background. The yeast remains restrained, adding only a faint fruity whisper without masking the hop character.

◐ Taste

The palate opens with a pleasantly full body—noticeably rounder and more substantial than typical filtered lagers—courtesy of the suspended yeast. Hop bitterness is restrained and elegant at 20 IBU, allowing the soft malt sweetness to sit comfortably alongside herbal, slightly peppery hop notes. The wheat malt contribution adds a subtle creaminess that rounds the finish without heaviness.
