Stouts Out

Tap to rate

Stouts Out is a strong stout that Bullhouse matures in former bourbon barrels and releases once a year for the colder season. Roasted malt provides bitter cocoa, dark chocolate and fresh coffee; the wood adds vanilla, oak and a warming whiskey note without covering the base beer. The barrels are filled in late winter and emptied in autumn. Quantities are limited.

◎ Appearance

Deep garnet-black in the glass with minimal light transmission, characteristic of the style's high roast levels. A dense, tan head forms and clings to the glass with substantial lacing, indicating good protein content from the roasted malts. Carbonation is moderate and well-integrated, supporting a creamy mouthfeel without excessive effervescence.

◌ Aroma

The nose leads with roasted cocoa and dark chocolate notes from the deeply kilned malts, layered with fresh espresso and subtle burnt grain character. Underneath, bourbon barrel influence emerges as vanilla and dry oak, with a gentle whiskey warmth that frames rather than dominates the aromatic profile. The wood integration is restrained, allowing the coffee and chocolate foundation to remain at the forefront.

◐ Taste

The palate enters with bold roasted bitterness and cocoa-driven flavor that builds through the mid-palate, supported by a full, slightly warming body. The bourbon barrel character develops gradually on the tongue—vanilla and toasted oak notes emerge without masking the underlying stout character. At 65 IBU, the bitterness is assertive but balanced, finishing dry with lingering roast and a subtle whiskey heat.

◑ Finish

The finish is long and drying, with roasted malt bitterness and oak tannins persisting on the palate and gums. A gentle whiskey warmth lingers in the throat, fading gradually over several minutes without becoming harsh or astringent.
