Carolus der Starke is Binding's winter doppelbock and its oldest speciality, first served on 28 January 1902, the name day of Charlemagne. Bottom-fermented and brewed to 18.6 °P, it pours a warm, deep brown with ruby highlights and a beige head. Dark bread, caramel, raisin and cocoa build on the nose. The palate is full and malty-sweet with fine roasted notes and a gentle warmth from the alcohol, ending on toasted malt and mild bitterness. It is sold from the pre-Christmas weeks to the end of January.
