Jex-Blake Mosaic IPA
A golden single-hop IPA named after Sophia Jex-Blake, Scotland's first practising female doctor. Mosaic is the only hop, and the brewery describes juicy tropical fruit aromas of pineapple and mango followed by pine and citrus on the palate. At 5.6 % and 50 IBU the bitterness is firm, but the fruit stays in front. The Mosaic version, first released in 2020, is the standing beer; versions with Galaxy and Nectaron appeared as limited runs.

Serve well-chilled. Session IPAs are at their best cold — the lower ABV means less warmth to balance the hops.
The curved shape concentrates hop aromas and supports a thick head. Essential for aromatic ales and IPAs where the nose is half the experience.
Drink fresh. Session IPAs are brewed to be consumed young — the hops are at their best now.
