◎ Aussehen

Pale straw yellow with excellent clarity and a fine, persistent white head that clings to the glass with delicate lacing. The carbonation is visibly lively, with a continuous stream of fine bubbles rising through the bright liquid.

◌ Aroma

The nose opens with sharp citric and vinous notes characteristic of aged lambic, followed by subtle stone fruit and a gentle funkiness reminiscent of aged leather and old wood. Beneath lies a light yeasty minerality with hints of green apple and a faint bubblegum sweetness that softens the overall acidity.

◐ Geschmack

Bone-dry on entry with a crisp, sour attack that builds through the palate with complex layers of tart fruit, dried stone fruit, and subtle earthy undertones. The minimal bitterness (5 IBU) allows the wild yeast character and gentle funkiness to shine, while a whisper of bubblegum sweetness provides fleeting balance before the dry finish asserts itself.

◑ Abgang

The finish is dry and persistent, with lingering acidity and a subtle mineral grip that extends well into the aftertaste. No sweetness lingers; instead, a clean, almost vinous dryness and the faint echo of aged funk mark the close.
