From the yeast, not any added ingredients. Bavarian Weissbier yeast produces isoamyl acetate (the banana ester) and 4-vinyl-guaiacol (the clove phenol) during fermentation. Fermentation temperature nudges the balance: warmer → more banana; cooler → more clove. Paulaner runs warmer, Franziskaner cooler.
