Brouwerij Troost
Brouwerij Troost brewed its first beers in 2013 in a former monastery in Amsterdam's De Pijp. Its founders were pub owners who had never brewed before and wanted guests to watch the brewing and drink beer straight from the source. They began with three beers and a yearly capacity of 100,000 litres, all of it drunk on site. A far larger brewhouse followed at Westergas, where up to 700,000 litres a year are brewed and bottled, while De Pijp stays the place for experiments, new recipes and small batches. Everything is made in-house with locally grown ingredients: ten standard beers plus a rotating lineup, lemonades, and gin and jenever distilled from leftover beer.

How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
