Memento is a raspberry sour with an intensely fruity nose of fresh raspberry, then tart notes reminiscent of red-berry candy, a subtle touch of yoghurt, a floral hint and light minerality; a trace of vanilla or biscuit may surface. It is not too sour. Raspberry purée, vanilla, lactose and Mosaic go into the recipe. It became a permanent beer because the brewery was tired of its earlier limited raspberry sours running out of stock.
