Hymir

Tap to rate

Hymir is an imperial stout, top-fermented and brewed with large amounts of barley malt, part of it roasted. That malt bill makes it dense and very dark; fine roast and chocolate notes define the flavour and are balanced by a measured bitterness. It reaches 8.5% ABV from an original gravity of 20.5° Plato. The name comes from a giant of Norse myth who owns a huge brewing kettle.

AI-generated sensory profile for Hymir

◌ Aroma

The nose leads with pronounced roasted barley and dark chocolate notes, layered with secondary hints of coffee and burnt grain. Fine malt depth underlies these roasted characteristics, creating a complex, earthy foundation. No harsh pyrolytic notes; the roast remains refined and restrained.

◐ Taste

The palate enters full and substantial, with roasted malt and chocolate flavours immediately apparent. Mid-palate balance is achieved through measured noble hop bitterness at 65 IBU, which prevents any cloying sweetness while allowing the malt profile to remain prominent. The alcohol warmth (8.5% ABV) integrates smoothly, supporting rather than dominating the overall structure.

◑ Finish

The finish extends moderately long, with roasted and chocolate notes persisting in the aftertaste. Residual bitterness lingers gently without drying harshly.
