Number of the Beast

United States·American Strong Ale
Tap to rate

Judgment Day, the base beer for Cuvée de Tomme, had never been released from bourbon barrels, so it went into first-fill ones. The raisins in that base took over the flavour, steering the talk to oatmeal-raisin cookies and a freshly baked treat, so cinnamon sticks and dried chiles went into the barrels too. 14% ABV.

◌ Aroma

The nose opens with vanilla and caramel notes from the first-fill bourbon barrel, followed by dried dark fruits—raisins and prunes—that form the beer's aromatic foundation. Subtle spice emerges in the mid-notes: cinnamon and a whisper of dried chile provide gentle heat, while undertones of toasted oak and biscuit anchor the overall impression.

◐ Taste

The palate is full and sweet on entry, with oatmeal-raisin cookie notes immediately apparent alongside a rich maltiness. Mid-palate reveals warming spice and a subtle heat from the chiles, balanced against caramel sweetness and woody oak influence. The 35 IBU provides gentle herbal bitterness that prevents cloying, while the 14% ABV manifests as a controlled alcohol warmth rather than harshness.

◑ Finish

The finish is long and smooth, with cinnamon and oak lingering on the palate alongside fading raisin sweetness. A dry, slightly peppery aftertaste develops as the warmth subsides, leaving no harsh alcohol burn.
