Eulogy

Tap to rate

Eulogy is an 8% cream stout built on a blend of a 12% Imperial Stout and a 14% barrel-aged Imperial Stout that spent 12 months in a Casa del Sol mezcal barrel. The mezcal stays in the background but adds complexity. After maturation, chocolate, hazelnut and coconut cream go in: a chocolate and hazelnut dessert for sweet tooths. Vegan.

AI-generated sensory profile for Eulogy

◎ Appearance

Deep mahogany-brown to near-black, with an opaque body characteristic of the style. A dense, tan head forms with moderate retention and fine lacing that clings to the glass. Carbonation is subdued, appropriate for an Imperial Stout of this weight and maturation.

◌ Aroma

The nose opens with roasted malt and dark chocolate, followed by hazelnut and subtle coconut cream notes. Beneath these lies a whisper of mezcal smoke and agave, kept purposefully restrained by the blending. There is no sharp alcohol bite, suggesting careful integration after barrel-aging.

◐ Taste

Entry is full-bodied and smooth, with cocoa and hazelnut forming the core flavor. The mid-palate develops a creamy mouthfeel enhanced by the coconut addition, while the mezcal barrel aging contributes layered complexity—hints of oak, smoke, and dried agave without dominating. Bitterness is moderate and well-integrated, finishing at 65 IBU without harshness.

◑ Finish

The finish is long and warming, with lingering chocolate and hazelnut giving way to a subtle mezcal dryness. Residual sweetness from the cream components fades gracefully, leaving a clean, slightly smoky aftertaste.
