ILA Scotch Ale

◎ Appearance

Dark amber with mahogany undertones and a warm, luminous quality characteristic of barrel-aged ales. The head forms with moderate density and settles to a fine, persistent ring of lacing that clings to the glass. Clarity is bright, with no cloudiness or particulate matter.

◌ Aroma

The nose leads with rich notes of caramelized malt and toasted grain, underscored by the pronounced influence of Scotch whisky barrels—vanilla, oak char, and a subtle spirit warmth. Beneath lies a gentle sweetness reminiscent of toffee and dried dark fruit, with a soft backdrop of spice that suggests careful barrel selection and conditioning.

◐ Taste

The palate enters with a full, velvety mouthfeel and pronounced malt sweetness that evolves into layers of caramel, toffee, and chocolate. The oak and whisky-barrel maturation add depth and a gentle drying quality without overwhelming the core malt character; bitterness is restrained at 20 IBU, allowing the rich, warming spirit notes to carry through the mid-palate. The alcohol (8.5% ABV) integrates seamlessly, lending a subtle heat that enhances rather than dominates.

The finish is long and gently warming, with lingering notes of caramel, dark fruit, and barrel oak that fade gradually without sharp edges. A soft whisky-like dryness in the aftertaste leaves the palate contemplative, inviting another sip.
