Wonder IPA

Tap to rate

A Sour IPA with a fresh, slightly sour edge. Kilos of blackberry and passion-fruit purée and Mexican tajín, spicy just to the right degree, go into the brew, and a non-Saccharomyces yeast produces lactic acid during fermentation. It comes from the Massanassa microbrewery, which grew out of the founders' first homebrews in 2012.

◎ Appearance

A pale golden brew with translucent clarity and a fine, persistent white head that clings to the glass in delicate trails. The body exhibits bright amber tones that catch light, while moderate carbonation generates steady streams of small bubbles. Schaumhaftung is firm, leaving clean rings of lacing as the glass empties.

◌ Aroma

The nose opens with tart, vinous notes from the non-Saccharomyces fermentation, followed by prominent blackberry and passion-fruit esters that blend seamlessly with a subtle earthiness. Spicy tajín and dried chili warmth emerge in the mid-note, while noble hop character adds a clean herbal backbone without dominating the adjunct complexity. There is a light lactic tartness that frames rather than overwhelms the fruit.

◐ Taste

The palate strikes immediately with a bright sourness that coats the mouth, followed by pronounced berry and tropical fruit character balanced by moderate spice that complements rather than burns. Mid-palate reveals layered complexity: the lactic tang weaves through jammy blackberry notes and citrus brightness, while residual hoppy bitterness (60 IBU) adds structure without harshness. Finish is tart and slightly funky, with lingering fruit esters and a dry, spice-dusted aftertaste.

◑ Finish

The finish is crisp and enduring, with tart berry notes giving way to a drying, peppery conclusion. A subtle funkiness persists gently on the palate, leaving a clean, refreshing aftertaste that invites another sip.
