With wheat and hops scarce in the Bavarian Forest, he used only lightly browned barley malt and top-fermenting yeast in open wooden vats at 18 to 20 °C. The fast, lively fermentation threw up large bubbles that burst on the foam, so the beer seemed to steam. It pours amber and tastes mild and sparingly hopped, with biscuit, bread crust and light caramel from the malt, a gentle fruitiness from the warm ferment and very little bitterness.
