Each release is a numbered blend from red wine and cognac barrels, fermented with the house culture of wild yeasts and lactic bacteria. The latest comes from a single barrique left undisturbed for four years: pronounced acidity carries notes of oak leaf and elderflower. Earlier blends showed orange, flint, green apple and light oxidation, and the line as a whole is fruity, dry and distinctly vinous.
