Saison du Fermier is noticeably more textured. Side Project tends to let their cultures do their thing, and you can taste that restraint-free approach here—there's a subtle funkiness that creeps in on the back end, something slightly vinous and a touch unpredictable. The spice profile is more assertive, almost peppery where de Fete is soft. It's a beer that asks more of your attention and rewards it with layers that shift as it warms.
