Asahi Super Dry (1987) was a rewrite of Japanese beer: high-attenuation yeast that leaves almost no residual sugar, minimal malt sweetness, aggressive dry finish. What does 'super dry' actually mean?
Very high attenuation — the yeast eats almost all fermentable sugars, leaving minimal residual sweetness. Result is a crisper, sharper, more bitterness-forward finish because there's no sugar to soften it. Asahi engineered the yeast strain specifically for this profile; the beer's 1987 launch changed Japanese consumer expectations of lager.
What is first-wort brewing?
Kirin runs the wort from the mash tun into the kettle in stages — Ichiban uses only the FIRST wort (the initial richer runnings), discarding the later, weaker sparge. Less efficient (you waste sugars still in the grain), but delivers a more concentrated, cleaner-tasting wort. The trade-off is why Ichiban costs more than Kirin Lager.
