Joseph Holt Brewery
Joseph Holt, a weaver's son from Unsworth, left his job as a carter at a Manchester brewery and started brewing in 1849, in rented premises behind a pub in Oak Street. In 1860 he took a 999-year lease on land where the brewery still stands, and a water well there was later deepened to 526 feet. Six generations of the family on, the brewery brews ales top-fermented in square fermenters, with a yeast strain around 175 years old, and bottom-fermented lagers cold-conditioned for 21 days. Bitter dates to 1849, and Slovenian hops go into the lagers.

Compared with the wider catalogue of similar styles:
They stay close to the peer baseline on their recurring notes.
How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
