Tasting Notes

AI-generated sensory profile for Drood

◎ Appearance

Deep mahogany to near-black in the glass, with an opaque body that yields no light transmission. A dense, tan head settles to a thin collar and leaves substantial Schaumkleiden down the sides. The beer sits still and heavy, suggesting the elevated alcohol and barrel aging.

◌ Aroma

The nose leads with dark chocolate and roasted espresso, layered beneath vanilla and oak from the extended barrel maturation. Subtle rum undertones emerge—warm but not aggressive—alongside a thread of chocolate-covered berry that adds complexity without dominating. The wild yeast fermentation contributes a gentle earthiness that grounds the sweeter, wood-driven notes.

◐ Taste

Entry is smooth and silky, with brown sugar and chocolate-covered espresso leading the palate. Mid-palate develops a rich, full-bodied character: bourbon vanillin and dark roast coffee build warmth, while the chocolate-raspberry character emerges as a sophisticated counterpoint. Bitterness (65 IBU) presents itself more as a grounding mineral quality than harsh bite, allowing the barrel complexity and sweetness to remain in focus.

◑ Finish

Long and warming, with the alcohol (14.7% ABV) becoming gently perceptible as the beer warms. Oak and chocolate linger for several minutes, while a subtle drying effect from the roasted malt adds definition to the fade.
