Very Big Moose

Tap to rate

The brewery's signature imperial stout, first brewed in 2017 and released each year in new barrel-aged editions. The recipe is built around cacao and vanilla and, by the brewery's account, brings chocolate ganache and rich espresso. Maturation in bourbon casks adds toasted oak and burnt sugar. Other editions change the wood: the 2026 vintage includes one from Islay whisky casks with peat smoke and brine.

◌ Aroma

The nose opens with rich dark chocolate and cacao, layered beneath pronounced espresso and roasted malt notes. Bourbon oak aging brings toasted wood, caramel, and burnt sugar to the foreground, while vanilla adds a subtle confectionery sweetness. The 2026 Islay variant introduces earthy peat smoke and a briny maritime character that complicates the profile without overwhelming the chocolate base.

◐ Taste

Entry is full and viscous, with chocolate ganache and espresso immediately establishing the core flavor. Mid-palate develops layers of roasted barley, caramel, and vanilla cream, supported by 65 IBU of firm, measured bitterness that balances without dominating. The bourbon cask age adds toasted oak tannins and subtle burnt-sugar complexity; the Islay variant reinforces these with peat smoke and saline notes that linger on the back palate.
