Magma Bergamot Wit

This one opens with actual bergamot—not perfume, but the real thing. There's a honeyed wheat base underneath, then coriander and black pepper arrive like they've been waiting offstage. The finish is clean and almost dry, which is unusual for a wit; it doesn't cling to your palate. At 4.8% it disappears fast, which can be dangerous.

You taste the hops immediately—piney, herbal, slightly resinous. But it's wrapped in weizen softness, so it doesn't feel aggressive. There's banana and clove in there too, classic wheat beer notes, but they're background singers to the hop line. The 45 IBUs actually feel restrained for how prominent they are; this brewer knows how to layer.
