Two founding beers of US craft, but not the same style — this is Vienna Lager (Sam Adams) against American Pale Ale (Sierra Nevada), and the choice is whether you want malt-plus-noble-hop or citrus-hop-plus-crystal-malt. Sam Adams Boston Lager, 1984, put Vienna Lager on the American map: amber colour, Hallertau Mittelfrüh in the noble register, caramel-toast malt spine, medium body. Sierra Nevada Pale Ale, 1980, did the same for American Pale Ale: pale gold, Cascade hops that taste of grapefruit and pine, restrained crystal-malt backbone. Some of it. Sam Adams runs multiple breweries — including the original Boston brewery on Germania Street — but much of the production volume ships from larger facilities in Cincinnati and Pennsylvania. Recipe and standards are the same across sites; the Boston brewery is more heritage-and-tours than production-volume.
Because most modern APAs and IPAs use newer hop varieties — Citra, Mosaic, Galaxy — that lean tropical-juicy. Sierra Nevada is still built on Cascade (and Magnum for bittering), the classic PNW variety with a grapefruit-pine profile. It's what a pale ale was before the juicy revolution — assertive, drier, more resinous.
