Pfungstädter St. Nikolaus

The St. Nikolaus hits like a warm hug—deep amber-brown, smooth caramel and bread crust on the nose without any burnt edges. There's a pillowy malt sweetness that feels almost dessert-like, but the modest 22 IBUs keep it from tipping into cloying. It drinks deceptively easy for a doppelbock; you could absolutely have two without the heaviness ambushing you halfway through the second.

Tegernseer Quirinus

Quirinus has a tighter grip. Same brown clarity, but the aroma's earthier—there's a mineral, almost herbal undercurrent beneath the expected dark fruit and toasted grain. The body's marginally denser, and you can taste a slight spice note on the finish that suggests real attention to water chemistry and mash decisions. It's the kind of beer that reveals something different in the second half of the glass.
