Chimay Bleue
Deep copper-brown with persistent beige foam. The aroma is incredible: dark fruit, dried plum, a hint of chocolate, a warming ethanol note that's never harsh. The first sip reveals layers — sweet, fruited, with a complexity that changes as it warms. Dark cherry, chocolate, a faint spice. The alcohol is noticeable but very well-integrated. The finish is long, warm, slightly sweet, with lingering fruit. This is a beer for cold evenings when you have nowhere to be.
Westmalle Tripel
The Tripel style was largely invented here, and the original remains the template. Golden, hazy, with a huge white head. The aroma is extraordinary: orange peel, coriander, banana, fresh yeast, all in a complex, effortless harmony. The first sip is deceptively light — the carbonation lifts it, the spice keeps it interesting, the alcohol hides. Then you remember it's 9.5% on the second or third glass. The finish is dry, elegant, with a very faint bitterness and lingering spice.
