Pastry Kyseláč 15% Rybíz Malina Vanilka

Tap to rate

A pastry sour in the spirit of grandma's fruit tart: raspberry, blackcurrant and vanilla over a sour base, balanced and sweetened with lactose. Raspberry purée, currant juice and 100 vanilla pods from Madagascar went in before maturation, on a grist of Pilsner and wheat malt with wheat and oat flakes. Lactose is a sugar the yeast does not ferment.

Pale straw yellow with exceptional clarity and a delicate white head that settles to a thin collar with modest lacing. ◌ Aroma

The nose opens with bright raspberry and blackcurrant fruit, supported by Madagascar vanilla that reads as creamy rather than perfumed. Wheat malt provides a subtle breadiness underneath, while the souring culture adds a light, approachable tartness without aggressive fermentation notes. The overall effect is reminiscent of fresh jam layered over soft pastry dough.

◐ Taste

The palate leads with pronounced sourness balanced against lactose-derived sweetness, creating a playful tension that never tips into cloying. Raspberry and currant purées coat the mid-palate with genuine fruit flesh rather than extract, while vanilla provides a creamy, slightly woody undertone. The wheat and oat base offers a soft, almost custard-like texture that supports the berry acidity without heaviness.

◑ Finish

The finish is refreshing and dry despite the lactose presence, with residual berry acidity cutting through the sweetness. Vanilla lingers gently on the palate, leaving a subtle, warming impression that invites another sip.
